Commercialization of Antifreeze Proteins from Winter Cereals
Winter cereals survive subzero temperatures in the field by controlling the way that ice grows within their tissues. These plants produce antifreeze proteins that bind to the surfaces of ice crystals and prevent them from growing uncontrollably. In the presence of antifreeze proteins, the ice crystals remain small and do not create physical damage to the tissues. These antifreeze proteins are very effective in modifying ice crystal growth at exceeding low concentrations.
